At Mean Bao Bakery, we believe in:

Community. We appreciate our customers spending their hard earned money at Mean Bao Bakery and we want to put money back into our Albuquerque economy. We buy Albuquerque ingredients when possible. Currently we are locally sourcing honey, eggs, milk, flour, cheese, green chili and fresh fruit in season. Our bakery case cards will inform you which items are using local ingredients. Stay tuned for a listing of our Albuquerque vendors. We also donate 10% of our profits to Albuquerque charities. We have a board at the bakery that will have posted what local charity/cause we are supporting each month.

Quality over quantity. We use the freshest ingredients available and bake from scratch every morning. The earlier you come in the day, the better your chances are of getting the selection you want. When we sell out that day, we are out! Our pastries will never be day old-if we don't sell it to you the same day it's made, we won't sell it to you at all! The only exception to this rule is our great pineapple cakes, they will develop better flavor overnight. We also bake without adding preservatives-please enjoy your fresh bakery products the same day purchased!

Customer Service. Without the loyalty of our customers, we would not have a bakery! Our aim is to give you a consistently great tasting product with a friendly, knowledgeable, and courteous staff.

Diversity. At Mean Bao Bakery, we celebrate diversity, not only in the product we produce, but in the people with which we associate. We hope that as you may choose a pastry you have never tried before, you would also choose to have an interaction with a person you don't know.....just like pastries, you never know what you might enjoy!
